Highland cattle have been bred pure for untold generations. There is record of a definite breed of Highland cattle
as far back as the twelfth century. All traditional Highland colors are acceptable-namely, black, brindle, red, yellow,
dun and silver.
Highland beef is well marbled, with a minimum of waste fat. It is fine of grain and flavor, and the quality of
the meat is such that those who have never eaten it are hardly qualified to pass judgement.
